My sister got me a nice avocado. I thought of making guacamole, but wasn't sure yet if jalapenos are safe from the e. coli outbreak (they were the other suspects next to tomatoes). I searched through my collection of cookbooks and found a Cucumber Avocado Soup recipe from Williams Sonoma Taste.
It was easy, and didn't involve any cream at all. The avocado took care of the cream part. The only thing I skipped was straining the soup. I served this soup with my Grilled Salmon with Tea Rub. It was a very light but satisfying meal.
